Ingredients

Quantity Ingredient
1 whole chicken
1 cup chipotle sauce
2 tablespoons olive oil
2 chicken stock cubes
1 teaspoon dried oregano
1/2 teaspoon sugar
2 tablespoons red wine vinegar

Method

  1. Preheat oven to 220°C.
  2. Place chicken on a baking tray lined with foil. Mix the remaining ingredients and pour over chicken.
  3. Cover with foil and bake for 1¼ hours, basting occasionally with juices. Add a little water if necessary to prevent the chicken from drying out.
  4. Serve with tomato rice and refried beans.
