Ingredients

Quantity Ingredient
500g plain flour
1/2 teaspoon salt
1/2 teaspoon bicarbonate of soda
1 tablespoon butter
1/2 cup Anise tea
1 litre milk, boiled
10 eggs
vegetable oil, for frying
2 cups Cinnamon syrup

Method

  1. For the Buñuelos :

    Sift flour, salt and bicarbonate of soda into a bowl. Add butter and mix it in with your fingertips.
  2. Add anise tea and hot milk to the flour mix, beating until smooth. Pour mixture into a saucepan and cook slowly on a low heat stirring constantly until the mixture is very thick. Allow to cool.
  3. Add eggs one at a time, beating thoroughly with a wooden spoon. Set aside for 5 minutes.
  4. Heat enough oil to fill a deep griddle or heavy frying pan.
  5. With moist hands, take 1 tablespoon of the mixture and shape into a ball. Puncture a hole through the middle with your finger – creating a doughnut shape.
  6. Fry in the hot oil until golden brown.
  7. Serve with the cinnamon syrup poured over the buñuelos. Delicious!
