Ingredients

Quantity Ingredient
190g butter, plus extra for greasing
1/2 cup sugar
7 cups corn kernels, (fresh, tinned or frozen)
1 tin condensed milk
50g plain flour
1 tablespoon baking powder
5 eggs, separated
a little raw sugar, to sprinkle

Method

  1. Preheat oven to 180°C.
  2. In a bowl, cream the butter and sugar until pale and smooth.
  3. In a blender, purée the corn kernels with the condensed milk.
  4. In a separate bowl, sift together the flour and baking powder. Add the egg yolks, mixing until well combined.
  5. Combine thoroughly the butter, corn and egg mixtures.
  6. Beat the egg whites until stiff and gently fold into the corn mixture.
  7. Pour the mix into a greased, square baking dish. Sprinkle with raw sugar.
  8. Bake for 45 minutes, or until top is golden and a skewer comes out clean when inserted.
