Ingredients

Quantity Ingredient
1 loaf white bread, (2 or 3 days old)
750ml milk
1 cup caster sugar
1/2 cup raisins
1/2 cup blanched almonds, chopped
1 teaspoon vanilla essence
1 teaspoon ground cinnamon
125g butter, at room temperature, plus extra for greasing
2 eggs

Method

  1. Preheat oven to 190°C.
  2. Soak slices of the bread in the milk.
  3. When soft, mash well. Add the rest of the ingredients until very well combined.
  4. Pour into a buttered cake pan and bake for 45 minutes or until golden brown.
  5. Serve warm or cold with ice cream.
