Ingredients

Quantity Ingredient
1.5kg white sugar
1.5kg sweet potato, peeled, cooked and mashed
1 lemon
1/2 cup water
2 teaspoons vanilla essence
A pinch salt
coloured tissue paper, for wrapping

For the syrup:

500g white sugar
1/2 cup water

Method

  1. Disolve the 1.5 kg sugar in ½ cup water. Cook over a medium heat, stirring constantly until thick.
  2. Add the mashed sweet potato and the rind and juice of the lemon. Cook until very thick – this requires some patience and elbow grease, but it’s worth it!
  3. Cool slightly.
  4. Take around 1 tablespoon of the paste and form a log shape. (To avoid a sticky mess, keep hands moist.)
  5. Arrange log on a tray and set aside.
  6. For the syrup, dissolve the 500 g sugar in the water and cook until it reaches a syrup consistency.
  7. Brush the logs with this syrup and allow to set for 24 hours, uncovered. The sugar coating will be opaque when ready.
  8. Wrap each sweet individually in tissue paper. Perfect for little gifts!

Variation:

  • You can substitute the water used in the syrup with fruit juice, such as pineapple or guava, to make fruit-flavoured camotes.
