Ingredients

Quantity Ingredient
1 cup plain flour
1/2 teaspoon salt
1 cup boiling water
1 egg, lightly beaten
oil, for frying
1/2 lemon or lime, rinded
caster sugar and cinnamon, for coating

Method

  1. Sift flour and salt. Add the boiling water and beat vigorously until the mixture is soft and fluffy (it should be thick).
  2. Add beaten egg and continue to beat until mixture is glossy. Set aside.
  3. Heat the oil in a deep saucepan. Peel the rind of the lemon (or lime). Put into hot oil and allow to fry – this will infuse the oil with a citrus flavour. Remove peel.
  4. Spoon the churros mixture into a piping bag with a star-shaped nozzle.
  5. Hovering over the pan of hot oil, squeeze mixture through the piping bag to create a churro 'finger' around 10 cm long. Cut from piping bag with a knife straight into the hot oil, cooking until golden brown.
  6. Drain well and coat with sugar and cinnamon.
  7. Serve with Mexican hot chocolate.
