Caramel flan

Ingredients

Quantity Ingredient
1/2 cup raw sugar
1 tin condensed milk
1 tin reduced cream
4 eggs
1 tablespoon vanilla essence

Method

  1. Preheat oven to 150°C.
  2. Over a low heat, caramelise the sugar until golden brown. Pour caramel into an ovenproof dish, or individual ramekins, coating bottom and sides well. (You will have to work fast, as the caramel will set quickly.)
  3. Arrange the dish/ramekins in a large, deep baking tray which has been filled with enough water to reach halfway up the sides of the dish/ramekins.
  4. In a blender, place the remaining ingredients and blend until smooth. Pour mixture into the dish/ramekins.
  5. Bake for 45 minutes, or until set and brown slightly. Allow to cool, and then place in the fridge to set further.
  6. To serve, invert dish/ramekins onto a serving plate. Your flan should come out whole, coated in a lovely golden caramel!
