Ingredients

Quantity Ingredient
1 cup milk
3 egg yolks
1 cup sugar
3 tablespoons corn syrup, (or golden syrup)
2 cups fresh coconut, grated
1 cup coconut milk
1 1/2 cups cream, whipped

Method

  1. Place the milk, egg yolks and sugar on top of a double boiler. Bring the base water to the boil, stirring constantly.
  2. Add the corn (or golden) syrup, grated coconut and coconut milk, mixing well.
  3. When thick and smooth, turn heat off and allow to cool slightly. Add the whipped cream, folding well.
  4. Pour mixture into a metal tray and freeze.
  5. If you can, serve in the shell of a coconut, just like they do in Mexico!
