Ingredients

Quantity Ingredient
7 egg whites
1/4 teaspoon lemon essence
1/4 teaspoon salt
500g caster sugar
1 lemon, rinded

Method

  1. Preheat oven to 120°C (a very low heat).
  2. Place egg whites in a clean bowl and add the lemon essence and salt. Beat until the eggs form stiff peaks.
  3. Add sugar a little at a time and continue beating until very thick. Add the lemon rind and combine.
  4. On a greased baking tray, drop spoonfuls of the meringue mixture.
  5. Bake for 30 minutes or until just turning golden brown.
  6. While still warm, take two and sandwich the bases of them together. They will stick with their own syrup.
  7. When cooled completely, store in an airtight container.

Variation – Chocolate merengues

  • Replace the lemon essence with vanilla extract and replace the lemon rind with ¼ teaspoon cinnamon and 115 g grated dark chocolate.
