Ingredients

Quantity Ingredient
500g pork steak
1 teaspoon olive oil
200g chorizo
4 potatoes, cubed
4 spring onions, quartered
salt and pepper
1 sliced green or red chilli

Method

  1. Preheat oven to 200°C.
  2. Cut the pork into cubes, and slice the chorizo into 1 cm thick pieces.
  3. Place the potato cubes in a pan with a small amount of water and simmer until they are almost cooked (but still firm).
  4. Heat the oil in a griddle or heavy frying pan and fry the chorizo, but do not brown. Remove from the heat.
  5. Brown the pork cubes and onion quarters in the same oil the chorizo was fried in. Add salt and pepper to taste.
  6. Thread the pork, chorizo, potatoes, onion and chilli alternately onto metal skewers and place on a tray. Put the tray in the hot oven for around 10 minutes until the skewers are heated through and the potatoes are golden.
  7. Serve with refried beans, flour tortillas and a chilli sauce of your choice.
