Ingredients

Quantity Ingredient
1 cup black, pinto or red kidney beans
4 cups water
1/2 onion, quartered
2 garlic cloves
6 sprigs coriander
2 tablespoons oil
salt
sour cream and tortillas, for serving

Method

  1. Place all ingredients in a cast iron pan. Cover and cook slowly for 3–4 hours or until tender. Add salt prior to serving.
  2. Serve with a dash of sour cream and fresh tortillas.
