Mole is a common offering to dead loved ones during Day of the Dead (Dia de los Muertos) on 2 November. Mole has a complex and special flavour.

Ingredients

Quantity Ingredient
1/2 cup almonds
1 corn tortilla
3 tablespoons olive oil
1 chopped onion
2 garlic cloves, chopped
4 dried red chillies, deseeded
4 dried pasilla chillies, deseeded
2 tomatoes, peeled, chopped and deseeded
1/4 cup raisins
1/4 teaspoon ground coriander
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
2 tablespoons sesame seeds, toasted
30g bitter chocolate
1 cup chicken stock
500g uncooked chicken breast fillets, (optional)

Method

  1. Roast almonds in a medium–hot oven (180°C) for around 5 minutes.
  2. Fry the corn tortilla in a little oil until golden brown.
  3. In a blender, place the onion, garlic, chillies, tomatoes, almonds, raisins, coriander, cloves, cinnamon and corn tortilla with half the sesame seeds. Process this mixture until smooth.
  4. Heat the oil in a frying pan and sauté the puréed paste for 10 minutes, stirring often. Add the chocolate or cocoa and the chicken stock, then cook the mixture for 45 minutes over a very low heat.
  5. At this stage 500 g uncooked chicken breast fillets can be added and simmered for around 25 minutes, or until cooked.
  6. Scatter the rest of the sesame seeds over the top for garnish.
  7. This sauce can also be served with cooked meat such as beef steak, pork, chicken or turkey.
