'Gorditas' translates to literally mean 'little fat ones'. Traditionally made with lard, they are an indulgence to be enjoyed in moderation!

Ingredients

Quantity Ingredient
1/2 cup oil, for frying
1 cup Masa dough
4 tablespoons lard, (or butter)

Method

  1. Preheat oil in a deep pan. Mix lard into masa dough, beating until smooth. Form the gorditas in the same way as picadas.
  2. Fry the gorditas in the hot oil, constantly basting the top with oil until golden brown and puffed up.
  3. Drain well and serve immediately with chilli sauce and refried beans.

Variation:

  • Negritas – little black ones

    Add ½ cup mashed black or kidney beans to the masa dough before forming the tortillas.
