For a delicious breakfast (the way my Abuelo liked it)

Ingredients

Quantity Ingredient
2 cups Masa dough
2 tablespoons oil
1 1/2 cups Salsa roja
or 1 1/2 cups Salsa verde
1 cup queso fresco, danish fetta or other mild cheese, grated
1/2 white onion, finely sliced
8 eggs, (optional)

Method

  1. Take portions of masa dough, the size of golf balls, into wet hands and form into neat balls. Flatten into pancake shapes 5 mm thick.
  2. Cook on a hot, lightly oiled griddle or heavy frying pan for 30 seconds on each side. Keep warm wrapped in a tea towel while cooking the remaining picadas.
  3. Form edges, as shown opposite, around each picada by pinching the edge gently with your fingertips.
  4. Return each picada to the pan for around 20 seconds. Arrange on a tray and keep warm by covering.
  5. Heat the chilli sauce and pour a tablespoon over each picada and top with cheese and onion.
  6. For an indulgent breakfast, add a fried egg to each tortilla prior to adding the cheese and onion – just the way my Abuelo (grandfather) used to!
