Ingredients

Quantity Ingredient
1 1/2 cups * masa dough [rid:6716]
1 cup chicken, pork or beef, cooked and shredded
1 cup oil, for frying
1/2 white onion, finely sliced
1 cup queso fresco, danish fetta or other mild cheese, grated
1/2 cup sour cream
shredded lettuce, for garnish
4 radishes, quartered

Method

  1. Divide masa dough into 8 portions. Prepare the tortillas as per instructions in the Tortilla recipe, but do not cook them. (This is my mum‘s trick – cooked tortillas are normally used, but often fall apart when rolled up.)
  2. Arrange the uncooked tortillas on a damp tea towel to keep them moist.
  3. When all tortillas are formed, place a small amount of cooked meat on the tortilla, slightly off centre.
  4. Lift each taco carefully and place onto the damp tea towel and cover with plastic wrap (cling film) while you are making the remainder.
  5. Heat the oil in a deep, heavy frying pan.
  6. When hot, add the tacos a few at a time and fry until golden brown. Place on paper towel to drain.
  7. Top tacos with onion, cheese and cream. Garnish with lettuce and radishes.
  8. Serve immediately.
