Tamales are parcels of cooked corn dough, wrapped in corn husks or banana leaves, depending on the filling. They can be sweet or savoury.

Banana leaf tamales (tamales de masa) are the savoury kind with chicken, pork, beef or fish in a variety of sauces.

Ingredients

Quantity Ingredient
1 cup butter, (or lard)
3/4 cup masa flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup chicken stock
banana leaves, for wrapping

Method

  1. Beat butter until fluffy and light. Combine with the masa flour, baking powder, salt and stock. Beat until smooth and thick.
  2. Wrap the tamales in the banana leaves as shown in the illustrations. Place in a steamer and steam for 45 minutes to 1 hour.
  3. Serve with rice.
