A perfect tortilla is said to be one that puffs up when cooking. It is tradition to eat this perfect tortilla immediately – fresh off the pan!

Masa dough

Method

  1. Divide masa dough into equal portions the size of golf balls. Cover with a damp cloth to keep dough moist.
  2. Line a tortilla press with two sheets of plastic wrap (cling film). Place each ball between plastic, and press until tortilla is very thin. If you don’t have a tortilla press, roll very thinly with a rolling pin.
  3. Carefully peel off plastic wrap.
  4. Cook tortillas one at a time in a greased griddle or heavy frying pan for 50 seconds. Turn and cook the other side for another 50 seconds. You could also use the flat surface of a sandwich press to cook your tortillas.
  5. Cover tortillas with a cloth napkin to keep soft and warm.
