Chucumites or guabina are juvenile sea bass, which were once plentiful in the warm waters of the Gulf of Mexico.

Ingredients

Quantity Ingredient
4 small whole sea bass or barramundi
8 garlic cloves
1 teaspoon salt
1/2 teaspoon coriander seeds
1/2 teaspoon fennel seeds
1 lime, juiced
250ml olive oil, for frying
lime wedges, to serve

Method

  1. Pat the fish dry and ensure there are no scales left.
  2. Make 3 long incisions along the body of each fish. Using a mortar and pestle, pound the garlic, salt, coriander and fennel seeds and lime juice to form a paste. Rub the fish with this paste and set aside for at least 30 minutes.
  3. In a deep frying pan heat the olive oil over a high heat until smoking. Fry the fish for 3–4 minutes on each side. Drain on paper towels. Serve immediately with the lime wedges.
