Breadmaking has been a tradition in my family for generations. My Abuelo‘s father, Roberto, was a baker, as well as running a successful seafood restaurant in Alvarado. Abuelo would help make the bread with his father and stepmother, also selling the bread and other baked goods from door to door around the streets of his home town. Abuelo could knead dough for hours!

Tortas are Mexican sandwiches made from a variety of lovely bread rolls, many of which my Abuelo would bake and sell as a young man. The following recipes range from lovely light buns to more substantial rolls filled with wonderful melt-in-your-mouth meats. Torta street stands are very common in Mexico – they are the perfect quick snack for the office worker.
