Ingredients

Quantity Ingredient
1 tablespoon lard or olive oil
2 chorizo sausages, diced into 1 cm cubes
1 onion, finely chopped
3 waxy potatoes, cut into 1 cm cubes
500ml tomato passata
4 tinned chipotle chillies in escabeche, cut into strips
15g coriander leaves, chopped
4 Little buns
Green sauce

Method

  1. In a heavy frying pan, heat the lard over a medium–high heat and fry the chorizo with the onion for a few minutes. When the onion is translucent, add the potato and fry for a further 2 minutes.
  2. Add the tomato passata, chipotle, coriander and salt to taste. Cover and allow to simmer over a low heat for 10 minutes or until the potatoes are cooked.
  3. Fill the pambazos with the mixture while still hot and serve with the salsa verde.
