Ingredients

Quantity Ingredient
450g strong flour, plus extra if necessary
14g dried yeast
1 tablespoon sugar
1 1/4 teaspoons salt
250ml water

Method

  1. Sift the flour directly onto a work surface. Spread the flour out a little and add the dried yeast, sugar and salt. Mix thoroughly with your hands, adding the water a little at a time, bringing the mixture together and working the dough until all the water is added. The dough‘s texture should be a little dry.
  2. Keep working the dough, kneading for a few minutes until it is pliable, smooth and does not stick to the work surface or to your hands.
  3. Shape the dough into a ball, place it in a greased bowl, cover with a clean tea towel and leave to rest in a warm spot.
  4. Preheat the oven to 180°C.
  5. Once the dough has doubled in size, after about 1 hour, cut it into 8 portions and shape the teleras into log shapes. With both hands, flatten the sides a little. The centre will bulge, but that‘s okay. This will give the telera its original shape when cooked.
  6. Place the teleras on an oiled baking tray and bake them in the oven for 20–25 minutes or until golden. Allow them to cool on a wire rack before adding the fillings (see note).

Fillings for teleras

  • –Chipotle chilli, chicken breast, lettuce, avocado slices, topped with mayonnaise.

    –Borlotti beans, mozzarella cheese, melted and topped with salsa roja.

    –Serrano ham, lettuce, thinly sliced red onion, Monterey Jack cheese, sliced jalapenos and sliced tomato.
