Ingredients

Quantity Ingredient
60g masa harina flour
150ml water
1 litre full-cream milk
150g white sugar
1 cinnamon stick, plus 4 extra sticks, to serve

Method

  1. In a small bowl, combine the masa harina flour with the water and mix well.
  2. Transfer the masa mix, milk and sugar to a blender or food processor and blend until smooth.
  3. Place the mixture in a saucepan, along with the cinnamon stick, and cook over a low heat until the sugar has dissolved and the mix has slightly thickened, about 5–10 minutes.
  4. Atole is traditionally served in a terracotta mug with a stick of cinnamon to stir the drink with.

Variations:

  • You can add these flavours to the mixture at the blender stage:

    Strawberry: 200 g fresh strawberries, washed and hulled.

    Chocolate: 30 g cup unsweetened (Dutch) cocoa powder.

    Vanilla: The seeds of 1 vanilla bean.

    Pecan: 125 g pecans, pan-roasted and allowed to cool.
