For the flour tortillas

Ingredients

Quantity Ingredient
300g plain flour
2 tablespoons olive oil or lard, plus extra for frying
1/2 teaspoon salt
125ml warm water

For the filling

12 slices serrano ham
12 slices sharp cheese, such as Gruyère

For the avocado mash

Quantity Ingredient
2 avocados
40g red onion, finely chopped
1/2 ripe tomato, finely chopped
1/4 bunch coriander leaves, chopped
iceberg lettuce leaves, whole
3 radishes, thinly sliced

Method

  1. If making fresh tortillas (you can save time by using store-bought tortillas if you wish), place the flour in a large bowl. Add the olive oil or lard and combine with clean fingertips until a sand-like consistency is achieved.
  2. Dissolve the salt in the warm water and add this to the flour. Work the dough with your hands, adding extra water if needed to form a smooth, non-sticky dough that is easy to handle.
  3. Divide into 6 equal portions. Form tortillas using a tortilla press or by rolling the dough between 2 sheets of baking paper with a rolling pin until very thin. Cook the tortillas in a lightly oiled frying pan over a high heat for about 1 minute on each side. Keep the tortillas warm by wrapping them in a clean tea towel.
  4. To assemble a quesadilla, top 1 tortilla with a slice or two of ham, a slice or two of cheese and then top with another tortilla. Make the remaining quesadillas in this way until all your ingredients have been used. Set aside.
  5. For the avocado mash, using a fork, mash the flesh of the avocados with the onion, tomato and coriander. Add salt to taste.
  6. To serve, pile 2 tablespoons of the mash on a lettuce leaf and top with the radish slices. Arrange this lettuce and avocado cup in the centre of each individual plate.
  7. To finish making the quesadillas, cook them in a lightly oiled frying pan over a medium– high heat, one at a time, for about 3–5 minutes on each side or until the cheese begins to melt and the tortillas are slightly toasted. Cut each quesadilla into quarters and arrange them around the avocado and lettuce cups.
