Olive oil toast with white chocolate, caviar + Champagne

A little bit posh, these toasties are for VIPs only. The salty caviar works brilliantly with the crunchy toast and sweet white chocolate. All washed down with champers, this celebration will go down in history.

Ingredients

Quantity Ingredient
60ml extra-virgin olive oil
80g good-quality block white chocolate
30g black caviar

Champagne jelly

Quantity Ingredient
2 gold-strength gelatine leaves
225ml champagne
25g caster sugar

Bread

1 baguette, sliced into twelve 1 cm thick slices, cut diagonally

Method

  1. For the Champagne jelly, soak the gelatine in cold water. Put half the Champagne and the sugar in a small saucepan over medium heat. Stir the liquid to dissolve the sugar, then remove the pan from the heat. Drain the gelatine, squeeze out the excess water and discard the water. Stir the gelatine into the hot sugar syrup to melt it. Add the remaining Champagne and stir again to mix well. Strain the mixture through a small sieve into a small plastic container and store the jelly in the refrigerator for a couple of hours before serving.
  2. Preheat a grill to hot. Drizzle the olive oil over the bread slices and place them on a baking tray lined with baking paper. Toast the slices well on both sides under the grill and remove. Liberally grate the white chocolate over the warm slices and allow the heat to melt the chocolate.
  3. Place the slices on a serving plate. Take the jelly out of the refrigerator and, using a warmed teaspoon, ‘cut’ out small scoops of jelly and place them just off-centre on the slices of toast. Use a non-metallic spoon to scoop a small teaspoon of caviar onto each slice next to the jelly and serve immediately.

Pro tip

  • Omit the jelly if it’s too much hassle – these toasties work just as well with only the white chocolate and caviar. Make sure the Champagne goes to good use, though – cheers!
