Some things just work so well together, and eggs and anchovies are in that category. They are especially good in this posh egg on toast. The anchovy butter is delicious by itself on toast, as well as for many other dishes – try rubbing a chicken with it before roasting!

Ingredients

4 10 cm pieces turkish bread, cut lengthways
12 anchovy fillets, Ortiz or other good-quality brand
60g unsalted butter, softened
freshly ground black pepper
finely grated zest of 1/4 lemon
2 tablespoons finely chopped fresh chives
1/2 teaspoon cayenne pepper
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon worchestershire sauce

1 handful watercress, plus extra to serve

Method

  1. Preheat a grill to hot and toast both sides of the eight pieces of Turkish bread. Chop four of the anchovy fillets finely. Combine these with the butter, pepper, lemon zest, chives, cayenne pepper, nutmeg and worcestershire sauce.
  2. Spread the anchovy butter on four slices of bread and top each one with a fried egg and two anchovy fillets. Arrange some of the watercress on top and close the sandwiches with the remaining slices of toast. Using a serrated knife, push down gently and cut the sandwiches in half. Serve immediately with more fresh watercress.

Pro tips

  • Use the best anchovies you can afford. Freshly grated lemon zest will really lift this toast. Any bread works well, but I have opted for a great toasting Turkish, as I love the oil and seeds in the bread.
