Bulgarian feta, caramelised onion, lemon + mint in chive egg batter

This is cheesy, zesty and fresh. It’s battered but light at the same time and that’s down to the fluffy brioche. The caramelised onions, which are cooked in the microwave, are ridiculous and would go well in any sandwich in this book. Get onto them….now!

Ingredients

Quantity Ingredient
150g bulgarian feta, crumbled
175g mature cheddar, grated
10 fresh mint leaves, finely shredded
finely grated zest of 1 lemon
freshly ground black pepper
160g see method for ingredients
180g unsalted butter

Chive egg batter

Quantity Ingredient
3 eggs
150ml full-cream milk
40g parmigiano reggiano
4 tablespoons chopped fresh chives
freshly ground black pepper
8 slices brioche loaf

Method

  1. Preheat the oven to 180°C. For the chive egg batter, mix all the ingredients together in a bowl. Set aside.
  2. Mix the feta and cheddar together in a bowl and add the mint, lemon zest and pepper. Evenly distribute the cheese mix between four slices of brioche, pushing the filling to the edges and evenly levelling it off. Evenly distribute the caramelised onion on top of the cheese. Close the sandwiches with the remaining brioche slices and gently press down.
  3. Heat a non-stick frying pan over medium heat, add half the butter and let it melt. Briefly dip two of the sandwiches in the chive egg batter on both sides. Place the sandwiches in the pan and cook them for 4–5 minutes. Use a spatula to gently flip each sandwich over and cook for a further 4 minutes. Use the spatula to transfer the sandwiches to a baking tray lined with baking paper. Wipe the frying pan with paper towel and repeat the steps for the remaining two sandwiches.
  4. Transfer the baking tray to the oven and cook the sandwiches for a further 6 minutes. Remove from the oven and leave them to sit for a minute before cutting them in half and serving immediately

Pro tips

  • The tangy feta goes well with the zesty lemon and fresh mint. The cheddar melts it all together and the added parmesan is a great carrier of flavour. Soft-style bread is essential to soak up the egg batter.
