Ploughman’s: smoked leg ham, cheddar + chutney

One of my favourite jokes from the legendary British comedian Tommy Cooper was: Two cannibals were eating a clown and one said to the other, ‘Does this taste funny to you?’ Quality! Another one that tickled me was, ‘I ate a ploughman’s lunch today (pause)…he was livid’. Not quite as funny written down, but YouTube him – he was hilarious. Anyway…

Ingredients

Quantity Ingredient
8 slices soy and linseed sourdough loaf
4 tablespoons see method for ingredients
8 thick slices smoked leg ham
salt flakes
200g montgomery cheddar, grated
100g monterey jack cheese, grated
see method for ingredients, to serve
sorrel leaves, to serve
see method for ingredients, to dress the sorrel leaves
see method for ingredients, to serve
extra ham and cheese, to serve

Method

  1. Build the sandwiches, butter side down, on four squares of baking paper for ease of movement. Butter four slices of bread and turn them over.
  2. Evenly spread the pear and walnut chutney on the bread. Arrange the ham on each slice and season with salt and pepper before adding the grated cheeses. Butter both sides of the remaining slices and top the sandwiches off.
  3. Heat a toasted sandwich press and cook the sandwiches until they are golden brown and crispy on the outside and the cheese has melted. Remove from the press and serve with piccalilli, sorrel leaves dressed with the sweet mustard dressing, pickles and more cheese and ham on the side.

Pro tips

  • A ploughman’s is one of life’s great ambiguous dishes. Anything is allowed on a ploughman’s, so choose your meat and cheese to taste. Any great cloth-bound cheddar will do fine. I have used a soy and linseed sourdough from Michael James, the baker at my local, Tivoli Road Bakery, but you can use whatever you fancy.
