Ingredients

Quantity Ingredient
2 eggs
salt flakes
freshly ground black pepper
20g unsalted butter
1 slice cheddar

Method

  1. Lightly beat the eggs and season with salt and pepper.
  2. Heat an 18 cm non-stick frying pan over medium heat. Add the butter and let it melt. Cook just until the butter starts to froth then pour in the egg. Cook for 1 minute until the omelette has set on the bottom of the pan. Add the cheese slice to the centre of the omelette and use a small palette knife to fold the omelette flaps inwards to cover the cheese. Remove the pan from the heat and use a spatula to transfer the omelette onto your sandwich or plate.
