Ingredients

Quantity Ingredient
truss of mini tomatoes on the vine, (about 12–16 tomatoes)
drizzle light olive oil
salt flakes
freshly ground black pepper

Method

  1. Preheat the oven to 140°C. Line a baking tray with baking paper.
  2. Place the tomato vine on the baking tray, drizzle with olive oil and season with salt and pepper. Cook the tomatoes in the oven for 30 minutes. Remove from the oven and allow to cool. Use the tomatoes as required by squashing them into sandwiches.
