Ingredients

Quantity Ingredient
500g frozen pitted black cherries
150g jam-setting sugar
1 vanilla bean, seeds scraped
finely grated zest of 1/2 lemon

Method

  1. Defrost the frozen cherries overnight in the refrigerator in a sieve or colander set over a container to catch any juices.
  2. The next day, put the cherry juice, 100 ml water, the sugar, vanilla seeds and lemon zest in a saucepan over medium– low heat and gently bring to the boil. Add the cherries and again bring to the boil before removing the pan from the heat and chilling in the refrigerator overnight before using.
