Ring on our doorbell at around 7.15 a.m. on any random weekday and it’s highly likely that you will find one of us in front of the stove, stirring a pan of oatmeal or porridge while the kids are banging their spoons on the table, chanting: ‘Vi er sultne, vi er sultne!’ (We are hungry, we are hungry!). I am not sure what kind of marathon they run in their sleep, but they always wake up starving. Oatmeal is great in that sense, as it only takes a few minutes to cook and is packed with energy. Finish with a drizzle of honey if you prefer it sweeter.

Ingredients

1 free-range egg
100g rolled oats
360ml plant-based milk of choice
1/2 teaspoon ground vanilla
or 2 teaspoons vanilla extract
A pinch sea salt

To Serve

Quantity Ingredient
full-fat plain unsweetened yoghurt of choice
sliced ripe avocado
fresh raspberries
hemp seeds
chia seeds, colour of choice

Method

  1. Crack the egg into a medium-sized saucepan and whisk until combined. Add the rest of the oatmeal ingredients plus 250 ml of water, bring to the boil, reduce the heat and simmer for about 5 minutes or until thick and creamy, stirring from time to time so the oatmeal doesn’t burn on the base of the pan. Serve topped with a dollop of yoghurt, some avocado slices and raspberries and a sprinkling of hemp seeds and chia seeds.
