Earthy beetroot mixed with sweet apples, tangy lemon, cucumber and celery is the base of this very tasty juice. But the flavour is probably not what’s on your mind after your first sip. You will instead be preoccupied by that unusual feeling on your tongue from the jelly-like chia seeds that are floating in the juice. They are a rather unexpected sensation in a drink. Once you get used to the feeling you’ll quickly realise that it’s quite addictive and pleasant. The chia seeds also add a rare quality to a juice – not only does it satisfy thirst but it also stills hunger, as the seeds are high in protein.

Ingredients

Quantity Ingredient
4 raw beetroots,, tops removed and peeled
2 red apples, cored
1/2 cucumber, (organic if possible)
2 celery stalks with tops
1 lemon, peeled
4 tablespoons chia seeds, colour of choice

Method

  1. Wash the fruit and vegetables and roughly chop them so they fit your juicer. Feed them through the mouth of the juicer one by one, using the hard ingredients (e.g; beetroot, apple, cucumber and celery) to push the juicy ingredients (e.g. lemon) through. Taste and adjust the flavours to your liking.
  2. Add the chia seeds and stir well. Pour into two medium-sized sealable glass bottles (as featured in the photo) and store in the fridge for about 1 hour, or until the juice is chilled and the chia seeds have absorbed some of the liquid.
