Here is the quick method we use to make nut butter. Essentially, you just need nuts, salt and a food processor that you trust. When toasted nuts are mixed in a food processor they slowly release their natural oils and transform into a smooth butter that is amazing on top of breakfast bowls and in desserts.

Ingredients

Quantity Ingredient
600g nuts of choice, (or a combination of nuts and seeds)
1/4 teaspoon sea salt

Method

  1. Preheat the oven to 150°C.
  2. Spread the nuts out in a single layer on a baking tray and toast for 10–15 minutes or until golden. Remove from the oven and set aside to cool. Put the nuts and salt in a food processor and blend on a high speed for 10–20 minutes or until completely smooth. It will take some time before the ground nuts start releasing their oil, so don’t give up too early. Stop and scrape down the sides with a spatula every now and again (this also helps prevent your food processor from overheating).
  3. Pour into a sterilised medium-sized sealable glass jar, cool and store in the fridge. The nut butter will keep for a few weeks, if sealed.

Tips:

  • Making nut butter can be quite tough on food processors and low-budget brands tend to overheat easily, so stay attentive and turn it off to let it cool down if it starts smelling burnt.

    If you prefer a crunchier texture, add some chopped nuts towards the end of blending in the food processor.
