This is another Middle Eastern spice blend. We shared this recipe in our second cookbook, Green Kitchen Travels, but we refer to it quite often, so we thought it could be handy here as well.

Ingredients

Quantity Ingredient
4 tablespoons hulled sesame seeds
4 tablespoons ground sumac
2 tablespoons dried thyme
1/2 tablespoon ground cumin, (optional)
A pinch sea salt

Method

  1. Toast the sesame seeds in a dry frying pan on a low heat for about 5 minutes or until golden. Stir them every now and again to prevent them from burning. Remove from the heat and set aside to cool.
  2. Put the seeds and the rest of the ingredients in a bowl and mix well.
  3. Pour into a small sealable glass jar. The zaatar will keep for months in the store cupboard, if sealed.
