Jam-packed with earthy flavours from four different root vegetables, this juice is also naturally very sweet and refreshing. Beetroot is known to cleanse the liver and purify the blood. Don’t go throwing the pulp away, you can, for example, add it to hummus and falafel.

Ingredients

Quantity Ingredient
1/4 small raw sweet potato, peeled
1 large raw beetroot, peeled
2 raw carrots, tops removed and peeled
1/2 small lemon, peeled and pips removed
1 knob fresh ginger, peeled

Method

  1. Wash all of the ingredients and chop them to fit your juicer.
  2. Feed them through the mouth of the juicer one by one, alternating between the fibrous (ginger) and juicy (lemon) ingredients, while using the hard ingredients (sweet potato, beetroot, carrots) to push everything else through.
  3. Taste and adjust the flavours to your liking.
  4. Stir well, pour into a medium-sized glass and serve cold, or store in a medium-sized airtight glass bottle (as featured in the photo overleaf) to take on the go.
