Every Friday is forest hike day at our daughter’s preschool. The kids revel in making huts out of branches, climbing on fallen trees and picking fresh flowers and berries. They all bring along their own packed lunches to enjoy outside in the fresh air. As our Scandinavian winters can be quite harsh, we like to add a thermos full of this hot chocolate milk to our daughter’s lunch box, which always goes down a treat! Although we tend to drink this chocolate milk warm, it’s just as delicious served chilled and tastes just like store-bought chocolate milk. Or, actually, it tastes better!

Ingredients

150g raw nuts of choice
1 litre filtered water
4-6 soft dates, pitted
2 tablespoons cacao powder
1/4 teaspoon sea salt
1 teaspoon maca, mesquite or lucuma powder

Method

  1. Place the nuts in a bowl, cover with filtered water and soak for 8–12 hours in the morning or overnight.
  2. Drain and rinse the nuts, discarding the soaking water. Add them to a blender along with the water and blend on a high speed until very smooth.
  3. Strain the nut milk through a nut milk bag, piece of cheesecloth or a fine-mesh sieve and rinse out the blender.
  4. Return the nut milk to the blender along with the rest of the ingredients and blend on a high speed until completely smooth. Taste and adjust the sweetness to your liking by adding more dates if necessary.
  5. Store in the fridge in a large glass carafe with a lid/stopper. It can keep for a few days in the fridge, if sealed. When ready to serve, heat and pour into medium-sized glasses or a thermos (as featured in the photo).

Note

  • We like to use equal amounts of almonds, cashew nuts and unhulled sesame seeds, but a combination of hazelnuts, cashew nuts and macadamia nuts works well too.

Tip

  • If you have a nut allergy, simply use a combination of seeds (equal amounts of sesame seeds and hemp seeds work well) or an oat, rice, soy or coconut drinking milk.
