Chilled chai is an interesting taste sensation as the spices have very warm flavours. This is our shortcut to chai, where we simply cut open quality chai tea bags and mix them with almond milk, instead of gathering all the spices and herbs and boiling them together. This chai milk is just as delicious warm too – just gently heat the milk in a pot.

Ingredients

150g raw almonds
3 sachets quality chai tea, cut open
2-4 soft dried dates, pitted
1 litre filtered water
1/4 teaspoon sea salt

Method

  1. Place the almonds in a bowl, cover with filtered water and soak for 8–12 hours overnight.
  2. Drain and rinse the almonds, discarding the soaking water. Add them to a blender along with the rest of the ingredients.
  3. Blend on a high speed until completely smooth. Taste and adjust the sweetness to your liking by adding more dates if necessary.
  4. Strain the chai milk through a nut milk bag, piece of cheesecloth or a fine-mesh sieve and store in the fridge in a large glass carafe with a lid/stopper.
  5. The chai latte can keep for a few days in the fridge, if sealed. When ready to serve, pour into medium-sized glasses filled with the ice cubes.

Note

  • Choose a quality tea brand that uses real chai spices in their products. Our favourites are Pukka, Clipper or Yogi, but there are many great local brands out there as well.
