When mangos are in season and picked ripe, they taste unreal – so sweet and juicy. When we were travelling around Australia we just couldn’t stop feasting on them. We wanted to bottle that flavour and thus we came up with this exotic tropical delight. Layers of a pearly white and creamy coconut chia pudding with the aromatic floral tones of vanilla are marbled with fresh and tangy passion fruit pulp and a sweet and juicy mango smoothie. Ginger and lime add a spicy and zingy punch, while buckwheat and tahini add body, volume and a natural calcium boost. This one is a real showstopper. Indulge!

For the chia cudding cayer

250ml Chia pudding, made with white chia seeds and coconut drinking milk or tinned coconut milk

For the Mango Smoothie Layer

Quantity Ingredient
1 ripe mango, stone removed
2 passion fruit
or 1 golden kiwi fruit
2 tablespoons raw buckwheat
1 teaspoon hulled tahini
1/2 teaspoon fresh ginger, grated
or 1/4 teaspoon ground ginger
1/2 lime, juiced

To serve

Quantity Ingredient
2 passion fruit or golden kiwi fruit, pulp
mango flesh, finely chopped
toasted coconut chips

Method

  1. Add the mango flesh and passion fruit or kiwi fruit pulp to a blender along with the rest of the mango smoothie layer ingredients.
  2. Blend on a high speed until completely smooth.
  3. Spoon half of the chia pudding into the base of two medium-sized glasses (one of which is featured in the photo).
  4. Cover with a layer of the mashed passion or kiwi fruit pulp and half of the mango smoothie. For a beautiful artistic look, make messy uneven layers. Repeat with the rest of the chia pudding, more passion fruit pulp and the remaining mango smoothie.
  5. Serve the parfait cold with some chopped mango and passion fruit pulp, and a sprinkling of coconut chips.

Note

  • If using frozen mango, you can always add a dash of freshly squeezed orange juice (unsweetened and not from concentrate) to the blender for extra sweetness.
