We realized how well basil and strawberries tasted together when we combined them in a lentil salad in our first book. Ever since then, I always top my strawberry rye sandwiches with basil leaves, and we often add a few of them to our strawberry smoothies as they create more body. Here we also add some pomegranate seeds for a sweet, juicy and fresh twist. It’s a real crowd-pleaser this one. Enjoy!

Ingredients

Quantity Ingredient
150g frozen strawberries
1 ripe banana, peeled
1/2 pomegranate, seeds
4-6 fresh basil leaves
pinch vanilla powder
or 1/2 teaspoon vanilla extract
250ml oat milk

Method

  1. Put all of the ingredients in a blender and blend on a high speed until completely smooth.
  2. Taste and adjust the basil flavour to your liking by adding more leaves, if necessary.
  3. Pour into two medium-sized glasses and serve.
