Marrakech orange blossom and cardamom yoghurt

Most cafés and street vendors in Marrakech take pride in making their own raib (yoghurt). It is often rather sweet and spiked with orange blossom water or rose water, which gives it a unique Moroccan flavour. We included a simple recipe for making yoghurt in our last book and have therefore just shared a method for flavouring it here. If you are using bought yoghurt, choose a good-quality full-fat one. Goat or plant-based ones also work great.

Ingredients

450ml plain full-fat yoghurt, preferably with active live-cultures
2 teaspoons orange blossom water
or 2 teaspoons rose water
2 teaspoons clear honey
1/4 teaspoon ground cardamom

To serve

fresh fruit

Method

  1. Put the yoghurt in a bowl. Start with 1 teaspoon of flower water and add with the honey and cardamom. Taste and add more flower water if desired. Divide into 2 jars or glasses, top with fresh fruit and add straws.
  2. Serve immediately.
