Lemongrass, aubergine and Brussels sprout curry

This is a simple green Thai curry made from scratch, with a distinct tang of lemongrass, a sweet apple tone and a soft touch of coconut milk. It is inspired by one of the many curries we tried in Thailand. There they use small aubergines cut in half, but since they are difficult to find in Scandinavia we use the larger sort. If Brussels sprouts aren’t in season, you can replace them with any kind of cabbage, cut into bite-sized chunks.

Ingredients

2 tablespoons cold-pressed coconut oil
or 2 tablespoons cold-pressed olive oil
4 garlic cloves, finely chopped
2.5 cm piece fresh ginger, finely chopped
2 lemongrass stalks, crushed and very finely chopped
1/2 teaspoon dried chilli flakes
2 teaspoons ground turmeric
or 2 teaspoons fresh tumeric, grated
1 teaspoon mustard seeds, ground in a mortar
1 aubergine, cut in small wedges
2 small apples, peeled, cored and cut in cubes
250ml water
1 tablespoon apple cider vinegar
400ml full-fat coconut milk
300g brussels sprouts, cut in half
1 teaspoon fine sea salt

To serve

black rice
1 generous handful thai basil leaves
1 generous handful coriander leaves

Method

  1. Heat the oil in a large saucepan over a medium heat. Add the garlic and all the spices and reduce the heat. Sauté for a couple of minutes and stirring constantly to ensure they do not burn. Add the aubergine wedges one by one making sure all wedges get soaked in the spicy oil. Then add the apple, water and apple cider vinegar, cover with a lid and cook for 15–20 minutes or until aubergine wedges are tender.
  2. Add the coconut milk, Brussels sprouts and sea salt to the curry and gently simmer for about 10 more minutes. Stir in the Thai basil and coriander and serve with black rice and some salad on the side. Leftovers can be stored in the fridge for 3–5 days.
