I tried ca phe sua da at several cafés and coffee bars in Ho Cho Minh City and have also begun making it at home on the hottest of summer days or for moments when I need a special pick-me-up. This cold, sweet and yet potently strong drink tastes like a foreign relative of the frappuccino. In Vietnam they use a special drip-filter to brew the coffee, but any strong coffee – even a double shot of espresso – works fine. The tradition is to use condensed milk, but here we have whizzed together a date milk as a good plant-based alternative. It has the right thick consistency and sweet flavour. A pinch of cardamom is added for an extra twist. I brew the coffee ahead and let it cool a bit before adding it to the ice. It’s not the traditional way of doing it, but helps if you want to drink it without too much melted ice.

I haven’t got into beans, grinds and grams here – I simply recommend choosing a coffee that you like. Be aware that it will taste a little different cold – more intense. Balance it with as much sweetened milk as you like. — David

Ingredients

Quantity Ingredient
60ml strong, dark filter coffee
or 60ml a double shot of espresso
120ml unsweetened plant milk
6 fresh, soft dates, stoned
1/2 teaspoon freshly ground cardamom

Method

  1. Start by brewing the coffee, then leave to cool down a bit. Prepare the date milk by whizzing up the plant milk with dates and cardamom in a high-speed blender. You will get more milk than you need for one coffee, but just store the rest in the fridge (or make more coffee!)
  2. Pour the slightly cooled coffee into a glass filled with ice, then pour in as much date milk as you like. I find a 40:60 ratio of milk to coffee is perfect.
