Ingredients

Quantity Ingredient
1kg apples
or 750ml unfiltered apple juice

Method

  1. Start by juicing the whole apples in a juicer. Place the apple juice in heavy-based saucepan over high heat. Bring to a boil, lower the heat to medium and simmer for 45–60 minutes, stirring occasionally.
  2. The apple juice will cook down to about one-third of its original volume and form apple syrup. Leave to cool slightly before pouring into an airtight container. Keeps in the fridge for up to one month.

Tip

  • You can flavour the syrup by adding spices during cooking. Star anise, clove, cinnamon, vanilla, saffron, ginger or cardamom are all delicious with this intense and sweet apple taste.
