How to cook beans

Ingredients

Quantity Ingredient
250ml dried beans
750ml water, for soaking, plus more water for cooking
1/2 onion
1 carrot
2 bay leaf
1/2 teaspoon sea salt

Method

  1. Start by removing any stones and dried-up discoloured beans. Place the dried beans and water in a container and leave to soak for 6–8 hours (or overnight). Drain and rinse the beans and place in a thick-bottomed saucepan with a lid. Add over water until it is about 2½ cm above the beans, then add the onion, carrot and bay leaves.
  2. Bring to a boil then reduce the heat and simmer, covered, until tender. This will take approximately 45–90 minutes, depending on the variety of beans. Add salt when the beans are just tender. They are done to perfection when you can mash one between two fingers or with a fork. Drain off the liquid.
  3. Store cooked beans in the fridge where they will keep, covered, for 4–5 days.
