Sweet hazelnut masala chai

This hot tea is all about flavours. We love how the scent of cinnamon, star anise, cardamom and clove fills our kitchen as the chai simmers on the stove. We make it with our own hazelnut milk, and it is just as good on a hot summer day as a dark and cold winter evening.

Ingredients

Quantity Ingredient
2 cinnamon sticks
6 cloves
6 cardamom pods, split
2 star anise
1 slice fresh ginger
2 tablespoons black or green tea leaves
1-2 tablespoons palm sugar
250ml hazelnut or almond milk

Method

  1. Put water and the spices in a saucepan and gently bring to a boil, then reduce the heat and simmer for 15 minutes. Remove from the heat, add the tea and coconut palm sugar and steep for 5–7 minutes. Strain out the spices and tea and stir. Add the nut milk, reheat until barely simmering, then pour into cups and serve.
