Ingredients

Quantity Ingredient
200g baby spinach
120ml olive oil
2 garlic cloves
salt
freshly ground black pepper
1 quantity Basic spelt pizza dough
12 small courgettes, sliced
100g soft goat’s cheese

Method

  1. This pizza has a green sauce that can be prepared in a whizz, no cooking needed. Combine the spinach, olive oil, 60 ml water, the garlic, salt and pepper in a blender, and purée until smooth. Smear the spinach sauce evenly over the pizza dough. Arrange the courgette slices on top of the sauce, sprinkle with crumbled goat’s cheese and bake for about 10-15 minute until golden round the edges.
