Ingredients

Quantity Ingredient
1/2 Basic tomato sauce
1 quantity Basic spelt pizza dough
6 small potatoes, halved and boiled
12 slices aubergine, griddled and marinated
12 cherry tomatoes, halved
12 mushrooms, halved
a handful pickled capers, drained
6 small spring onions, divided lengthwise
2 sprigs oregano, leaves picked

Method

  1. Smear about two tablespoons tomato sauce on each pizza dough.
  2. Place the potatoes, aubergine, cherry tomatoes, mushrooms and capers on top. Add the spring onions and oregano and bake for about 10-15 minute until golden round the edges. You can also just use the tomato sauce, cherry tomatoes and oregano to make a simple and pretty cherry tomato pizza.
