One of the things we love most about our apartment is the high ceiling and large windows. They give that feeling of space that is very rare to find in an inner-city apartment. The only time we don’t love our windows is in the mornings. The sun sneaks in way too early during the summer and, like a clock, I feel Elsa kicking in my ribs: ‘Mor, mor vakna, jag vill spise frukost!’ (‘Wake up Mummy, I want breakfast!’). Obviously, we are not morning people, but if it’s something – err someone – who has given us better breakfast habits, it’s our daughter.

Elsa pulls us out of bed and into the kitchen right after she wakes up. And since we had her, we have actually started to eat breakfasts together. Before that, David had a coffee on his way to work and I took a smoothie with me to the gym. Now we sit there, around the breakfast table, eating together and talking. Two hours ahead of schedule.

With all that time in the morning, we now have much more varied breakfasts. We often make porridge, but some days we have fruit salad, and other days a slice of cheese on thin crispbread. We still make smoothies, but nowadays we eat them from a bowl, topped with granola. All of these breakfasts are included in this chapter, along with many more. Some of them can be whipped up in 5 minutes, while others take 24 hours, so, hopefully, you will be able to find something that fits your morning habits too.
