With a climate that rarely dips below 20°C, it’s no wonder that iced tea is a popular thirst-quencher in Brasil. There, it’s often home-made with mate, a South American tea made from the leaves of the erva-mate plant. Green tea makes a great substitute.

Ingredients

Quantity Ingredient
100ml green tea, infused overnight and strained
200ml apple juice
50ml elderflower cordial
50ml lime juice
mint leaves
handful ice cubes

Method

  1. Put all the ingredients in a cocktail shaker and shake vigorously for a few minutes. Strain into chilled tall glasses or tumblers and top up with ice cubes. Serve immediately.
