This is easy to make, and perfect for pepping up fresh green leaves.

Ingredients

Quantity Ingredient
3 1/4 tablespoons dijon mustard
4 tablespoons tarragon vinegar
625ml extra-virgin olive oil
1 garlic clove, finely crushed
1 lemon juice, squeezed
1/2 teaspoon caster sugar, or to taste
1/4 teaspoon sea salt, or to taste

Method

  1. Put the mustard and vinegar in a bowl and whisk well. Slowly whisk in the oil, ensuring the mixture emulsifies. Whisk in the rest of the ingredients and season with salt and pepper. Pour into a clean bottle or jar, seal and keep refrigerated. Use within a week or two.
